Spinach and Tomato Quiche

1 ½ lbs. spinach

1 t. rosemary

4 tomatoes, chopped

3 eggs

3 egg yolks

2 c. milk

Salt and pepper to taste

½ c. grated Gruyere cheese

2T. chopped garlic scapes or chives

2T. chopped parsley

1 9’ pie crust, unbaked

Preheat oven to 400*.  Line quiche (or pie) pan with pastry.  Wash and tear spinach.  Cook for 10 min. in saucepan over low heat with rosemary and 1/4c. water.  Drain well. Place in pie crust with tomatoes and cheese. Beat eggs and yolks together with milk.  Season with herbs, salt and pepper. Pour over spinach mixture.  Bake 40 minutes until set and golden brown.
