Tomato Mozzarella Casserole

Tomatoes, sliced & blotted well
6 beaten eggs
22 oz shredded Mozzarella cheese
grated Parmesan cheese
1 c. cottage cheese
Fresh or dry parsley, basil, minced onion, & oregano 
salt & pepper
minced Jalapeno peppers

Grease a 9" x 13" pan.  Sprinkle with Jalapenos.  Sprinkle 1/3 of Mozzarella over bottom of pan.  Pour 1/2 of eggs over cheese.  Place a layer of tomatoes on top.  Sprinkle with Parmesan, basil, parsley, & minced onion, salt & pepper.  Repeat layers, omitting Jalapeno & adding cottage cheese.  End with a layer of Mozzarella & sprinkle with oregano.  
Bake at 350 degrees for 40 minutes.  Cool slightly before cutting.  
Great for a one dish, no meat meal.  I go a little lighter on the cheese than the recipe calls for.  Even better the next day, warmed up...if there is any left!
