Spinach and Almond Pesto

1 bunch of spinach, washed and steamed
1/2 cup olive oil
1/3 cup toasted almond slivers
1/2 cup grated parmesan
2 cloves roasted garlic

3-4 basil leaves
Salt and freshly ground pepper


Place steamed spinach, toasted almond slivers, parmesan, garlic, basil and splash of olive oil in a food processor bowl. Puree as you slowly drizzle remaining 1/2 cup of olive oil in a thin stream. Pesto is done when it’s pureed and creamy. Add salt and pepper to taste. Mix with pasta, serve on toasted bread for a simple crostini or add to new potatoes before roasting.
